NRAs 2018: Efficiency Award

WINNER: LeanPath UK

LeanPath provides integrated hardware and software products for large culinary institutions. Operating in 24 countries and 1,300 kitchens, its vision is to empower culinary teams to prevent food waste, and its mission is to make food waste prevention easy.

The company is in a period of rapid scaling to enable organisations around the world – such as Google, Aramark, Sodexo and Ikea – to commit to Target 12.3 of the UN’s Sustainable Development Goals to halve food waste by 2030.

It believes that front-line kitchen staff play a pivotal role in companies taking control of their food waste. Its high-tech products, coupled with its coaching process, address the high volumes and cost of food waste in culinary organisations.

By tracking all food waste transactions with LeanPath products, organisations become empowered to measure and analyse their food waste, and then make operational changes to reduce it and prevent it in the future.

JUDGES’ COMMENT: “This tackles one of the most difficult categories of waste in a sector which is a tough space to operate in. It can be rolled out to more organisations and has shown how it can drive large-scale efficiencies.”

LeanPath brings together hardware (bench scales, cameras, tablets, floor scales and displays) with customised software. This enables businesses to track all food waste transactions.

Each transaction is weighed and data such as food type, waste reason, pan size and disposition code is captured in seconds through a customised user-interface. Its bench scale product marries this data with a digital picture of the wasted food, and all details are electronically stored in a cloud-based database.

The data feeds an analytics platform, enabling clients to analyse the drivers of their food waste. An integrated dashboard provides graphics and reporting features, including waste overview summaries, participation reports, trend reports and talking points for staff meetings. Alerts, goal setting, and reward features supplement the process.

On average, organisations can cut food waste by 50% with LeanPath and reduce food purchases by 3-8%.
